Fresh quinoa salad with strawberries and walnuts
Serves 4
- 200 g mixed salad, e.g. lettuce, rucola, baby spinach
- 1 cucumber
- 250 g cherry tomatoes
- 200g quinoa
- 250 g fresh strawberries
- 100g walnuts
- 1 handful of mint
- For the dressing: 2 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, 1 teaspoon of mustard, 1 teaspoon of honey, salt and pepper
Method
- Wash the lettuce thoroughly under running water and chop up small.
- Slice the cucumber
- Halve the cherry tomatoes and strawberries
- Chop the mint finely
- Meanwhile, bring the quinoa to the boil with twice the amount of water and a pinch of salt and simmer for approx. 10 minutes.
- Roast the walnuts in the oven at 150°C (top/bottom heat) for 10 minutes.
- Make the dressing and season to taste with salt, pepper and other spices
- Toss all the ingredients in a large bowl and serve

Carrot cake with dates (sugar-free)
Ingredients for 1 cake tin (30 cm)
- 200 g of flour
- 150 g carrots
- 150 g yoghurt
- 60 g softened butter
- 80 g dates (destoned, dried)
- 2 eggs
- 1 sachet of baking powder
- 1 teaspoon of cinnamon
- Zest of ½ a washed organic lemon
- Flaked almonds (optional)
Method
- Preheat the oven to 180°C top/bottom heat (fan: 160°C)
- Finely dice the dates and soak in a bowl of water for 20 minutes.
- Peel and grate the carrots.
- Using a hand mixer or food processor, beat the butter, yoghurt, flour, eggs, baking powder, cinnamon and lemon zest in a large bowl until you have a smooth batter.
- Fold the grated carrots into the batter
Drain the water from the soaked dates, finely dice the dried fruit and mix into the carrot batter.
Grease a cake tin or line it with baking parchment and pour in the batter.
Sprinkle flaked almonds on the top (if using) and bake in the oven for 25-35 minutes. Towards the end of the baking time, use a wooden skewer to check whether the cake is done. If the skewer comes out clean, your cake is ready.
